Stop your Mac keyboard language switching on its own
Quick answer
In Keyboard settings, click Edit next to Input Sources, remove the layouts you don't use and turn off Automatically switch to a document's input source.
Why it happens
When more than one input source is installed, your Mac can swap between them. It may follow each document's last language, or you may hit the switch shortcut by accident while typing. With only one layout left, there's nothing to switch to.
How to fix it
Open System Settings and click Keyboard in the sidebar. Under Text Input, click Edit next to Input Sources.
Keyboard›Text Input›Edit…
In the list on the left, click a layout you never type with and click the minus button below the list. Repeat until only the ones you need are left.
Click All Input Sources at the top of the list, then turn off Automatically switch to a document's input source.

Click Done and type a few lines in Notes. The language should now stay put.
Still not fixed?
If it changes when you press Caps Lock, select your other language in the same sheet and turn off Use the Caps Lock key to switch to and from ABC. The wording differs a little between languages.

Control-Space swaps input sources, and it's easy to press by accident. To stop that, open Keyboard Shortcuts, click Input Sources and turn off Select the previous input source.
